Cheesy Broccoli Rice Casserole

When most people think of Thanksgiving dinner, they think of turkey.  The first thing that comes to my mind, however, is this casserole.  It remains my favorite Thanksgiving side dish and to me, no feast is complete without it!

 

Ingredients:

8 oz. cheddar cheese, cut into chunks

1 cup shredded cheddar cheese

1 can cream of mushroom soup

1/2 cup milk

8 oz sour cream

1 medium onion, chopped

4 tablespoons butter

2 cups chopped broccoli (fresh or frozen)

2 cups cooked rice

salt and pepper to taste

 

Directions:

  • Heat the butter in a 10-inch skillet over medium heat.  Add the onion and cook until tender-crisp, stirring occasionally.
  • Stir the broccoli in the skillet and cook until it’s tender-crisp, stirring occasionally.  Stir in the milk, soup, sour cream, and cheese chunks.  Cook and stir until the cheese is melted.  Season with salt and pepper.  Add cooked rice.  Pour the broccoli mixture into a 2-quart shallow baking dish.  Top with shredded cheese.
  • Bake at 350°F. for 30 minutes or until the mixture is hot and bubbling.
